Spinach Salad w/ Grilled Chicken, Onions, and Garbanzo Beans
Its been a while since my last shopping trip which means that I had to get a little bit creative in the kitchen. I wanted something that felt healthy with vegetables and protein. I did a little pantry search search and came up with this really tasty salad. It features grilled chicken, chick peas, and a sauteed onion. What I love about this salad is that it packs in the protein, has a healthy dose of fiber and is uber filling.
Spinach Salad w/ Grilled Chicken, Onions, and Garbanzo Beans Serves 4 Per Serving: Calories 340 Carbs 23 Fat 14 Protein 34 Fiber 7
- 8 cups Spinach
- 1 lb chicken breast
- 1 can garbanzo beans
- 1 large onion
- 1/2 cup Parmesan
- 2 TBSP olive oil
- 1 TBSP white balsamic vinegar
- 1 tsp red pepper flakes
- salt and pepper to taste
Step 1: Begin heating pan on stovetop at medium-high heat. While stove is heating, chop onions.
Step 2: Add 1 TBSP olive oil to pan + 1/2 TBSP white balsamic vinegar + 1/2 red pepper flakes. Allow to sizzle for a minute to blend flavors. Then add onions and saute until translucent, about 5 minutes.
Step 3: While onions are cooking put your chicken on the grill. I sprinkled mine with a bit of salt and some extra red pepper flakes.
Step 4: Drain and rinse your can of garbanzo beans and add to the onions. Keep them on the stove for another 5 min or so to warm through.
Step 5: Divide rinsed spinach between 4 plates. Top each plate with 1/4 of the grilled chicken, 1/4 of the onion & garbanzo bean mixture, and 2 TBSP of shredded parmesan. For a dressing I mixed up 1 Tbsp of olive oil + 1/2 Tbsp white balsamic vinegar + 1/2 tsp red pepper flakes. Drizzle evenly over the salads.
